tuesdays are often reserved for tacos, and since i don’t eat red meat, it’s mostly fish around here. we used to eat at fred’s sometimes on tuesdays (introduced to us by my cousin, danielle), but since we’ve been cooking at home more it’s been a grilling affair. ashley asked for the recipe, but we don’t really have a recipe, so here are several variations of what we do…
01. we marinate the fish (usually mahi-mahi) in lemon juice, olive oil, garlic, and parsley. fry up corn tortillas (you can serve them with warmed tortillas, but i loooove them fried). serve with cabbage, chopped cilantro, fresh salsa, cheese, and sour cream.
that’s it! that’s what we usually do. when we’re short on time we pick up the marinated mahi-mahi from trader joe’s. all it needs is to be thrown on the grill or in a pan.
a couple of weeks ago i used this recipe from sunset. it was really good.
and i plan on trying this one (pictured above) sometime this summer, too.
and there’s always the good ‘ol baja fried fish taco.
