funny stories.

no pics today! just some funny things that j has said the past couple of days, jotted down here more for me than you, but entertaining nonetheless for you maybe?

j’s new favorite spot is our office/guest room/new baby’s room (pics of re-do coming soon). he calls it “chelsea’s room” since that is also our cat’s (chelsea) favorite spot. he likes to jump on our new sofa bed and while i was working on the computer last night he says, “mama i just farted….did you smelled it?”. ah…funny to mama but gross to you i’m sure. i just love how kids figure out tenses in our language.

today j had his first official dentist visit (btw have found a fabulous kids dentist…so cool. if you are local please shoot me an email for his name/number). he did fabulous and has no cavities! after the appointment we headed out for a sandwich at a local deli and although he was an angel for the hygienist and dentist, he was a little devil for us at lunch, refusing to eat all his food and just being a general curmudgeon. as the mr. was trying to feed him, j shook his head and said, “i just had my teeth cleaned!”.  ah, this kid kills us.

zucchini flatbread.

nothing delights me more right now than food, and since i don’t get paid until this weekend, i’ve been staying away from shopping. : )

Zucchini Flatbread

(recipe adapted from here)

  • Nonstick vegetable oil spray
  • 1 10-ounce tube refrigerated pizza dough, or one sheet puff pastry, thawed
  • 3/4 cup garlic-and-herb cheese spread (such as Alouette), divided
  • 3/4 cup finely grated Parmesan cheese, divided
  • 3 tablespoons chopped fresh Italian parsley or chopped fresh basil, divided
  • 1 small red onion
  • 1 7- to 8-inch-long zucchini (yellow or green), cut crosswise into 1/8-inch-thick rounds, divided
  • Olive oil

Preheat oven to 400°F. Line baking sheet with parchment paper; spray with nonstick spray. Unroll dough onto parchment. (If using puff pastry, roll dough out to make thinner). Spread herb cheese over dough, leaving 1/2-inch plain border. Sprinkle with half of Parmesan and 2 tablespoons parsley or basil.  Arrange 1 row of zucchini down 1 long side of dough. Arrange onion rounds in row alongside zucchini. Repeat until all veggies are used. Brush vegetables with oil; sprinkle with salt and pepper. Sprinkle with the remainder of the parmesan. Bake bread until puffed and deep brown at edges, about 20-24 minutes. Sprinkle with 1 tablespoon parsley or basil.

*I have made this several times, and honestly, have not always used the Alouette cheese. As a substitute I have mixed cream cheese with herbs and it’s come out just as good. Also, I didn’t bother making rows of zucchini and onions…I pretty much just threw it all on!

carrot raisin bread.

i love, love, love the carrot raisin muffins and bread from mimi’s, and when we harvested carrots from our garden i knew i had to try to find a recipe to copycat. here’s my version.

Carrot Raisin Bread

(recipe adapted from here)

  •  1 1/2 C. all-purpose flour
  • 1 tsp. cinnamon
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 C. vegetable oil
  • 1 C.  granulated sugar
  • 3 eggs
  • 1/4 C. maple syrup
  • 1 tsp. vanilla extract
  • 1 C. shredded carrot
  • 1 C. raisins
  • 3/4 C. chopped walnuts

Preheat oven to 350 degrees. Combine flour, cinnamon, baking powder, baking soda, and salt in a large mixing bowl. In another bowl, combine oil, sugar, eggs, syrup, and vanilla with an electric mixer. Add shredded carrot and mix. Add raisins and walnuts and mix well by hand. Pour flour mixture into the other ingredients and stir until combined. Pour batter into two ungreased 8-inch loaf pans. Bake for 60 minutes, or until done. Makes 2 loaves.

 *i opted to make some mini muffins for my boy. this recipe yielded 12 mini muffins, one regular size loaf, and one mini loaf.

what we ate…what we ate…what did we eat? the exact menu from last week escapes me, but i remember this much:

this was one of the most relaxing weekends yet, and weather wise? so mild and perfect. the reason why i feel so lucky to live here. hope you had a great weekend!
