three things (and people) i love.

i love how j still talks about his favorite film, north shore, and how when we ask him who lives in hawaii he says uncle mike, auntie audrey, cousin elijah, and rick (from the film). he talks about surfing when we go to hawaii this coming summer and how we need to be careful that we don’t “hit the weef” (reef). oh my lord it’s so cute. we make him say it over and over and over.

i love the little cooing sounds that s is making. so cute.

and i love how my husband cleans the kitchen. it’s taken years of training, but my god, the man leaves it sparkling clean! i love you hubs!

one semester is over as of today. one more until summer! woohoo!

this weekend we will be showering cousin, kristen, with gifts and love, j starts a new basketball season, and some planning will be started for a certain someone’s birthday party in april. i believe in planning ahead, people.

sometimes you have to bake a cake, just because.

 

pre-holidays i bought this cake mix and frosting mix from tj’s. they were as good as scratch, i tell you. i added a bit of orange extract to the frosting to add a lil somethin’. diet, schmiet.

{bits from} our weekend.

another low key one. husband worked on saturday so i took the kids to babies ‘r us and kept us occupied for a good two hours looking for birthday presents. then…relax, relax, relax…for all of us.

j discovered the wii…

baby s loves to chill in her baby bjorn babysitter.i  highly recommend this thing.

our pediatrician told us 40 minutes of tummy time a day. too bad she hates it and i can’t stand to hear her cry. i’m working on getting over it because i know it’s good for her.

saturday night was a rough one. i had a hard time getting the baby back to sleep after her 4 a.m. feeding, so slept in a bit. j, however, did everything in his power to get us up, including “petting” me (me: what are you doing? him: i’m just petting you, mommy!), trying to put my hair in a ponytail (read: pulling hair HARD), and asking me, over and over again, “mommy, why you not waking up???). so…the rest of the day was spent lazing about until we had to get ready for a birthday party at prehistoric pets.

 j, as you can see, was a very brave boy and had loads of fun.

i endorse.

not that my endorsements count for anything, but i have to say that this laundry soap is rad. i found it by browsing amazon lists of moms who cloth diaper and i use it for all our laundry now. it takes a couple loads to take effect (you need to get rid of all former soap residue from your washing machine), but our laundry is super, super soft now, and i don’t even use laundry softener anymore. it’s non-toxic, biodegradable, safe for babies, hypoallergenic, environmentally safe.  it doesn’t smell like flowers, but hello, it’s because there are no artificial perfumes added. you only need a small scoop (which comes with the soap), and one small tub covers 80 loads. just read the reviews here! and here!

broccoli and three cheese lasagna.

it is sunday night folks, and i just made this lasagna. it’s pretty easy and pretty good. so good, that i couldn’t wait to put a post up. : ) my kid loves broccoli. it’s pretty amazing, actually. tonight he said, “mama, can i have broccoli with my dinner?” love it. this serves 4 people, so it was perfect for our little family.

broccoli and three-cheese lasagna

from real simple

1 15 oz. container ricotta

1 lb. frozen broccoli-thawed, patted dry, and chopped

2 1/4 cups grated mozzarella (9 oz)

1/2 cup grated parmesan (2 oz)

salt and pepper

1 16 oz. jar marinara

1/2 cup heavy cream

8 no-boil lasagna noodles

olive oil

1. Heat oven to 400 degrees. In a large bowl, combine the ricotta, broccoli, 2 cups of the mozzarella, 1/4 cup of the parmesan, 1/2 tsp. salt, and 1/4 tsp. pepper. In a small bowl, combine the marinara and cream.

2. Spoon a thin layer of the sauce into the bottom of an 8-inch square baking dish. Top with 2 noodles, a quarter of the remaining sauce, and a third of the broccoli mixture; repeat twice. Top with the remaining 2 noodles and sauce. Sprinkle with the remaining 1/4 cup of mozzarella and 1/4 cup of the parmesan.

3. Cover tightly with an oiled piece of foil and bake until the noodles are tender, 35 to 40 minutes. Uncover and bake until the top is golden brown, 10 to 15 minutes.
